Unusual to write about you say……well this lowly vegetable has started to gain acceptance and honor at last! The proof is pictured below. As a lifetime companion of the revered broccoli, the taste is similar but does not have the respected classification of being a “green vegetable”.

The Miracle of Cauliflower (draxe.com)
Cauliflower is often considered one of the healthiest foods on earth- and there is good reason why. With its rich supply of health-promoting phytochemicals, high level of anti-inflammatory compounds, and ability to ward off cancer, heart disease, brain disease, and even weight gain- it seems there isn’t much cauliflower can’t do.
Cauliflower is a member of the cruciferous vegetable (or Brassicaceae) family- along with broccoli, cabbage, kale, brussel sprouts and some other less common varieties.
Armed with this information, be brave and try a flowerette of this magnificent vegetable! 😉

My favorite is eating it raw with Durkee sauce. Cooked in milk with butter and salt and pepper.
