Joe looked at the clock and started to panic. He raised his hand to share the time as the wait staff was busy preparing the cold plates. To keep the crisp fried fish safe he had to maintain a warm temperature before serving. It was hard enough to keep the brown gravy covered potatoes from turning into a party meltdown. At last serving time was here!
