The chef in front beckons you to Shelly’s Cafe. She decided years ago to set up an establishment on the famous highway, Route 66. Every day of building, making sure the food supplies were delivered on time, the kitchen was immaculate and the servers well presented in the famous red and white uniforms. Every person who was employed by the famous chef had been screened for knowledge of the menus, polite behavior and how to make change as a cashier. That was in the fifties and has been a symbol of excellent service ever since. Route 66 is still famous.
