Salad just doesn’t fit the bill does it! Chops for us today, done in water in a pan and the veg will have some mint leaves in the pot as they cook.

I like a salad stuffed with lots of veggies, but made by someone else. A friend and I when my kids were little used to combine our fridge ingredients for lunch.
