My open burrito/tostada/pizza/ meal today. Unshown lettuce tomato salad. I used small skinny flour tortillas and my burrito mix inside, topped too generously with cheese. Burrito mix is refried beans, salsa, shredded cheese, and finely chopped onions.

Looks lovely. I love Mexican – we’ve started to get places selling it here the last 20 years, but I’m not sure how authentic it is.

There’s one restaurant here in town that is supposed to be authentic. I’ve had their cheese enchiladas and love the flavor. On a trip to Mexico with our kids we discovered their version of tacos is drastically different than American ones.
