Chilly but sunny, snow melting off and warmer temps expected. Turned my heat on this morning. Having hot perfect peach” tea and baking beans.
I soaked white beans overnight with a tsp of baking soda and this morning I’m boiling them for about 30 minutes to soften them more. I use a half onion, S and P, and a couple of pieces of bacon. When they’re done I’ll put them in a Pammed casserole dish, not drained and add more bacon, molasses, maple syrup, and mustard. Bake till done in a slow oven.

I love beans of any kind. I grew up with mostly this type of baked beans. No matter what you add or leave out, doesn’t matter, your choice. I like to put a little cider vinegar on mine.
